Blackberry and basil fruit fool

A light and refreshing dessert combining fresh blackberries, basil, and whipped cream for a delightful treat.

Ingredients
  

Blackberries

  • 100 g blackberries

Basil leaves

  • 4 large leaves basil leaves

Icing sugar

  • 1 tbsp icing sugar powdered sugar

Cassis liqueur

  • 2 tbsp Cassis liqueur optional

Double cream

  • 100 ml double cream heavy cream

Instructions
 

  • Chop the basil leaves finely.
  • Simmer berries, basil, and sugar with water for 10 minutes, then cool.
  • Blend berry mixture with cassis if using, then chill.
  • Whip the cream until light and fluffy.
  • Fold berry mixture into whipped cream, then serve in glasses with a berry garnish.

Notes

Chilling the fool enhances the flavors.
