Black Forest Whoopie Pies

Ingredients
  

Dough

  • 2 cups all purpose flour
  • 1/2 cup cocoa powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 cup granulated sugar
  • 8 tbs unsalted butter, softened
  • 1 egg egg
  • 1 tsp vanilla extract
  • 1 cup milk
  • 1/4 cup sugar (for the kirsch syrup)
  • 1/4 cup water (for the kirsch syrup)
  • 1 tbs kirsch
  • 1/2 pint heavy whipping cream
  • 1/2 tsp sugar (for the filling)
  • 1/2 cup cherry jam
  • 1/2 oz square of semi sweet chocolate

Instructions
 

  • Mix dry ingredients, then beat sugar and butter until fluffy.
  • Add egg and vanilla, then alternate adding flour mixture and milk. Chill for 1 hour.
  • Preheat oven to 400°F, line baking sheets, scoop dough, and bake 8-10 minutes. Cool on wire rack.
  • Make kirsch syrup by boiling sugar and water, then add kirsch and cool.
  • Fill cooled cakes with whipped cream and cherry jam, brush with kirsch syrup, and sprinkle chocolate curls.

Chill the dough for better handling and flavor development.
