Ingredients
  

Meat

  • 1 pound cooked breakfast sausage or bacon

Potatoes

  • 3 cups cooked breakfast potatoes or hashbrowns

Vegetables

  • 1 each green pepper (diced)
  • 1 each yellow onion (diced)

Dairy

  • 8 oz cheddar
  • 1 tablespoon butter
  • 8 large eggs
  • 1/2 cup cottage cheese (optional)
  • salt and pepper
  • 8 large tortillas

Instructions
 

  • Cook the bacon or sausage until crispy, then set aside.
  • Prepare the potatoes until golden and crispy.
  • Melt butter, then sauté green pepper and onion until soft.
  • Whisk eggs with salt, pepper, and cottage cheese, then cook until just set.
  • Combine eggs, meat, cheese, and potatoes, then fill tortillas and roll.
  • Optional: Toast burritos in a skillet until golden brown.

Notes
