Ingredients
  

  • 0.5 cup unsalted butter at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 3.5 medium bananas or 2 large bananas
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350 degrees and line two 8x4 bread pans with parchment paper or grease well with butter or baking spray.
  • Mash the bananas until well mashed with small bits for texture and set aside.
  • Cream the butter and sugar together, then add the eggs and mix until combined.
  • Add the flour, baking soda, and salt. Mix until combined, then incorporate the mashed bananas and vanilla extract.
  • Divide the batter evenly between the two pans and bake for 35-40 minutes, or until a cake tester comes out clean.
  • Let the bread cool for 5-10 minutes in the pan, then remove and cool on a wire rack. Serve warm or with butter.

Notes

For an extra delicious treat, spread a little butter on the warm banana bread before serving.
