Beef Teriyaki Bowls

Ingredients
  

Meat

  • 1 pound ground beef
  • 1 teaspoon toasted sesame oil
  • 3 green onions diced green onions (white part)
  • 2 teaspoons minced garlic
  • 2 teaspoons fresh grated ginger
  • 0.75 cup low sodium tamari or soy sauce
  • 2 tablespoons honey or more, to taste
  • 2 teaspoons chili crunch
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • 2 cups cooked white rice
  • 2 large carrots grated or peeled into ribbons
  • 1 cucumber sliced
  • 1 cup edamame

Garnish

  • cilantro and sesame seeds for garnish

Instructions
 

  • Heat a large skillet over medium heat with sesame oil. Add ground beef and cook until mostly cooked through.
  • Add white part of green onions and garlic; sauté for a few minutes.
  • Reduce heat to low, pour in tamari, chili crunch, honey. Whisk cornstarch with water and add to the skillet. Stir and simmer until thickened. Adjust flavors as desired.
  • Assemble bowls with rice, beef, vegetables, and edamame. Garnish with cilantro and sesame seeds. Serve and enjoy!

Notes

This dish is less sweet than traditional teriyaki; feel free to add extra honey or brown sugar for more sweetness.
