Instructions
Preheat oven to 400°F (200°C). Season beef with salt and pepper.
Heat olive oil and sear beef on all sides until browned (3-4 min per side). Rest briefly.
Mix garlic, rosemary, thyme, and Dijon mustard; rub over beef.
Roast in oven for 20-25 minutes; check for medium-rare (135°F/57°C).
Let rest for 10 minutes, then slice and serve garnished with fresh herbs.
Notes
Use a meat thermometer for perfect doneness.
