  • 2 pounds beef tenderloin
  • Salt and pepper to taste Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • 1 tablespoon Dijon mustard
  • 1 cup beef broth
  • 2 tablespoons butter
  • Fresh herbs for garnish Fresh herbs for garnish

Instructions
 

  • Preheat oven to 400°F (200°C). Season beef with salt and pepper.
  • Heat olive oil and sear beef on all sides until browned (3-4 min per side). Rest briefly.
  • Mix garlic, rosemary, thyme, and Dijon mustard; rub over beef.
  • Roast in oven for 20-25 minutes; check for medium-rare (135°F/57°C).
  • Let rest for 10 minutes, then slice and serve garnished with fresh herbs.

Notes

Use a meat thermometer for perfect doneness.
