Ingredients
  

Meat

  • 1 pound lean ground beef (90/10)

Grains

  • 1 cup uncooked quinoa, rinsed thoroughly

Broth & Liquids

  • 2 cups low-sodium beef broth

Vegetables

  • 1 medium red bell pepper, diced
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced

Oils & Fats

  • 1 tablespoon olive oil

Spices & Seasonings

  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • ½ teaspoon chili powder

Additional

  • 1 cup black beans, rinsed and drained
  • 1 avocado sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime cut into wedges

Instructions
 

  • Cook quinoa in beef broth until tender, about 15 minutes.
  • In a skillet, heat olive oil and cook ground beef until browned, then add spices and vegetables, cooking for 5 minutes.
  • Combine cooked quinoa with beef mixture, then top with black beans, avocado, cilantro, and lime wedges.

Notes

Feel free to add hot sauce or cheese for extra flavor.
