Instructions
Cut beef into 1-inch chunks and dredge in flour.
Brown beef in melted butter, then add onion and garlic; sauté briefly.
Return beef to pot, add stock, pumpkin, Worcestershire, salt, and pepper; simmer for 3 hours.
Add potatoes, carrots, thyme; cook for 30 minutes. Season and serve.
Notes
For richer flavor, let the stew sit overnight before serving.
