Ingredients
  

Meat

  • 3 pounds beef (stew meat or chuck roast)
  • 1/2 cup all-purpose flour
  • 3 tablespoons butter

Vegetables

  • 1 cup yellow onion (chopped)
  • 1 clove garlic (minced)
  • 3 pounds potatoes (peeled and diced)
  • 1 pound carrots (peeled and sliced)
  • 4 cups beef stock or broth
  • 3 cups pumpkin puree
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon kosher or sea salt
  • 1 teaspoon ground black pepper

Herbs

  • 3-4 thyme sprigs thyme sprigs

Instructions
 

  • Cut beef into 1-inch chunks and dredge in flour.
  • Brown beef in melted butter, then add onion and garlic; sauté briefly.
  • Return beef to pot, add stock, pumpkin, Worcestershire, salt, and pepper; simmer for 3 hours.
  • Add potatoes, carrots, thyme; cook for 30 minutes. Season and serve.

Notes

For richer flavor, let the stew sit overnight before serving.
