  • 4 tablespoons coconut oil or avocado oil
  • 1.5 pounds stew beef (cut into bite sized pieces)
  • 1 inch piece ginger (grated)
  • 2 cloves garlic (minced)
  • 1.5 teaspoons cumin powder
  • 1.5 teaspoons coriander powder
  • 0.5 teaspoon turmeric
  • 1.5 teaspoons red chili powder
  • 1 teaspoon salt or to taste
  • 8 ounces tomato sauce or passata see note 1
  • 2 tablespoons neutral oil
  • 1 tablespoon gram flour see note 2
  • 1 teaspoon red chili powder
  • 0.25 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1 teaspoon cumin powder
  • 13.5 ounces coconut milk see note 3
  • 1 cup water
  • 1 piece boiled egg
  • 1 green chili (Jalapeno, Thai, Serrano , chopped)
  • to taste Cilantro (chopped)
  • to taste Red pepper flakes
  • to taste Fried onions
  • Nut of choice for crunch (peanut, almond, cashew)
  • 1 lemon or lime (cut into wedges)

Instructions
 

  • Heat oil and sauté ginger, garlic, and spices until fragrant.
  • Add beef and cook until browned.
  • Pour in tomato sauce, coconut milk, water, and simmer until beef is tender.
  • Serve over noodles, garnished with herbs, chili, fried onions, nuts, and lemon wedges.

Notes

Adjust spice levels and garnishes to taste for best flavor.
