Instructions
Slice beef into 1/4-inch thick pieces and season with salt and pepper.
Heat oil in a pan, sear beef in batches until browned, then set aside. Cook mushrooms briefly, then keep warm.
Add butter to the pan, then cook onions and garlic until softened. Stir in flour and cook for 1-2 minutes.
Gradually whisk in broth, add beef back to the pan, bring to a boil, then simmer covered for 1-1.5 hours until tender. Add more broth if needed.
Stir in cream, season with salt and pepper, then add mushrooms and cook for 1-2 minutes. Serve hot.
Notes
For a richer flavor, use fresh herbs or a splash of red wine during cooking.
