Ingredients
  

Meat

  • 3 pounds beef sirloin
  • salt and pepper to taste salt and pepper to season beef
  • 1 tablespoon canola oil
  • 1 can (8 ounces) whole mushrooms, drained
  • 1 tablespoon butter
  • 1 onion onion, peeled and chopped
  • 3 cloves garlic, peeled and minced
  • 0.25 cup flour
  • 3 cups beef broth
  • 1 cup all-purpose cream

Instructions
 

  • Slice beef into 1/4-inch thick pieces and season with salt and pepper.
  • Heat oil in a pan, sear beef in batches until browned, then set aside. Cook mushrooms briefly, then keep warm.
  • Add butter to the pan, then cook onions and garlic until softened. Stir in flour and cook for 1-2 minutes.
  • Gradually whisk in broth, add beef back to the pan, bring to a boil, then simmer covered for 1-1.5 hours until tender. Add more broth if needed.
  • Stir in cream, season with salt and pepper, then add mushrooms and cook for 1-2 minutes. Serve hot.

Notes

For a richer flavor, use fresh herbs or a splash of red wine during cooking.
