Ingredients
  

Meat

  • 500 g skirt steak or flank steak
  • 3 pieces bell peppers
  • 1 large red onion
  • 3 tbsp olive oil
  • 2 limes limes
  • 2 tsp ground cumin
  • 1.5 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tsp dried oregano
  • Salt and black pepper Salt and black pepper
  • 200 g long-grain white rice
  • Small handful fresh cilantro

For serving

Instructions
 

  • Whisk together 2 tbsp olive oil, juice of 1 lime, cumin, chili powder, paprika, garlic powder, onion powder, oregano, salt, and pepper. Toss steak in marinade and sit for 20 mins.
  • Cook rice according to package. Stir in chopped cilantro and juice of half a lime. Keep warm.
  • Heat a skillet with remaining olive oil. Sear beef 2-3 mins per side, then remove. Sauté peppers and onions 5-7 mins.
  • Return beef to skillet, toss with veggies, cook 1 min, squeeze remaining lime.
  • Divide rice into bowls, top with beef and veggies, add toppings as desired.

Notes

Adjust spice levels to taste and serve with your favorite toppings.
