Instructions
Preheat oven to 350°F and prepare a 9"x13" pan with cooking spray.
Cook ground beef in oil until browned, then add onion and spices; stir with water and cook until softened.
Spread 1 cup of enchilada sauce in the baking dish. Warm tortillas, fill with cheese and beef, roll up, and place seam-side down.
Pour remaining enchilada sauce over rolled tortillas, sprinkle with cheese, and bake for 20 minutes until bubbly and melted.
Garnish with cilantro, diced onion, avocado, and serve with lime wedges.
Notes
Use mild enchilada sauce for a less spicy dish.
