Instructions
Cut beef into 3-inch chunks, season with salt, pepper, and taco seasoning, then pressure cook with tomato paste, chiles, and orange juice for 45 minutes.
While beef cooks, blend cottage cheese, cheddar, taco seasoning, salt, jalapeños, jalapeño juice, and warm water until smooth for the queso.
Sauté sliced peppers and onions in avocado oil until caramelized, about 15 minutes, then season with taco seasoning.
Shred the cooked beef and return it to its juices. Assemble bowls with rice, beef, sautéed veggies, and toppings. Drizzle with queso and serve.
Notes
Adjust seasoning and toppings to taste. Use fresh herbs and lime for added flavor.
