  • 1/2 large yellow onion diced

Meat

  • 1 pound lean ground beef (93/7)
  • 1/4 cup chicken broth or water
  • 1 packet taco seasoning (1-ounce)
  • 2 tablespoons tomato paste
  • 1.5 teaspoons minced garlic

Sweet Potatoes

  • 6 cups diced sweet potatoes (2 large potatoes)
  • 2 tablespoons olive oil
  • 1.5 teaspoons paprika
  • 1 teaspoon garlic powder

Seasonings

Instructions
 

  • Preheat oven to 425°F (220°C). Roast diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper until tender (~30 mins).
  • Cook rice according to your preferred method.
  • Sauté diced onion in olive oil until golden, then add ground beef, cook until browned. Stir in chicken broth, taco seasoning, tomato paste, and garlic; cook 1-2 mins.
  • Assemble bowls: divide rice, top with roasted sweet potatoes and beef mixture. Add toppings and drizzle with cilantro-lime sauce if desired.
