Instructions
Preheat oven to 425°F (220°C). Roast diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper until tender (~30 mins).
Cook rice according to your preferred method.
Sauté diced onion in olive oil until golden, then add ground beef, cook until browned. Stir in chicken broth, taco seasoning, tomato paste, and garlic; cook 1-2 mins.
