Rice and Seasonings

  • 1 cup long-grain white rice, rinsed
  • ¼ teaspoon salt
  • 1 ½ cups water
  • 1 piece lime (zest and juice)
  • ¼ cup chopped cilantro
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 pound lean ground beef
  • 2 tablespoons tomato paste
  • 2 tablespoons taco seasoning
  • ¼ cup water
  • 1 15-ounce can black beans
  • 1 cup frozen corn kernels, thawed
  • 1 cup chopped tomatoes
  • 1 cup shredded lettuce

Instructions
 

  • Bring rice, salt, and water to a boil, then reduce heat, cover, and cook for 15 minutes. Let sit covered for 5 minutes, then fluff and stir in lime zest, juice, and cilantro.
  • Heat olive oil in a skillet, cook onion for 5 minutes, add garlic and cook 1 minute. Add ground beef and cook until browned, about 7 minutes.
  • Stir in tomato paste, taco seasoning, and water; cook for 2-3 minutes until saucy.
  • Divide cilantro lime rice among bowls, top with beef, beans, corn, tomatoes, and lettuce. Add guacamole and lime wedges, then serve.
