Ingredients
  

Meat

  • 1 lb ground beef
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper diced
  • 1 zucchini diced
  • 1 cup broccoli florets
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon salt, or to taste
  • 0.25 teaspoon black pepper
  • 0.25 cup beef or vegetable broth
  • 1 tablespoon soy sauce (optional, for extra flavor)

Garnish

  • to taste fresh parsley, chopped

Instructions
 

  • Dice all vegetables and set aside.
  • Cook ground beef in a skillet until browned, then set aside.
  • Sauté onion and garlic in the same skillet, then add vegetables and spices. Cook until tender.
  • Pour in broth and soy sauce, simmer for a few minutes to blend flavors.
  • Return beef to skillet, stir to combine, garnish with parsley, and serve hot.

Notes

Feel free to add more vegetables or adjust seasonings to taste.
