Ingredients
  

Meat

  • 1 lb ground beef (85/15 or 90/10)

Vegetables

  • 1 cup sliced bell peppers (red, green, yellow, or orange)
  • 1 small onion, diced
  • 2 cloves garlic, minced

Pantry Items

  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp black pepper

Additional

  • to taste Salt (start with 1/4 tsp)
  • optional red pepper flakes or hot sauce

Toppings

  • optional green onions, cilantro, avocado, lime, cheese, sriracha

Instructions
 

  • Dice onion, mince garlic, slice bell peppers, and cook rice if needed.
  • Cook ground beef in a skillet with olive oil until browned (6–8 min), season lightly.
  • Push beef aside, sauté onion and garlic until fragrant (1–2 min), then combine.
  • Add bell peppers and cook for 4–5 min until tender.
  • Stir in tomato paste, soy sauce, paprika, cumin, pepper, and red pepper flakes if using; cook 2 min.
  • Add cooked rice, stir, and cook 2–3 min to meld flavors. Serve hot with toppings.

Notes

For extra flavor, add hot sauce or red pepper flakes to taste.
