Ingredients
  

Rice

  • 2 cups cooked white or brown rice

Chicken

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

Sauces and dressings

  • 0.5 cup barbecue sauce
  • 0.25 cup ranch dressing

Seasonings

  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Vegetables and toppings

  • 1 cup shredded lettuce
  • 0.5 cup cherry tomatoes, halved
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup sliced green onions

Optional toppings

  • as desired avocado slices or corn Optional for extra topping

Instructions
 

  • Combine chicken with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss to coat.
  • Cook chicken in a skillet over medium heat for 6-8 minutes until golden and cooked through. Add barbecue sauce, stir, and cook 2-3 minutes.
  • Divide cooked rice into bowls and fluff with a fork.
  • Layer shredded lettuce on rice, top with BBQ chicken, drizzle ranch, and sprinkle cheese, tomatoes, and green onions. Add optional toppings if desired.
  • Serve immediately while warm and enjoy.

Notes

For extra flavor, add avocado slices or corn on top.
