Instructions
Combine chicken with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss to coat.
Cook chicken in a skillet over medium heat for 6-8 minutes until golden and cooked through. Add barbecue sauce, stir, and cook 2-3 minutes.
Divide cooked rice into bowls and fluff with a fork.
Layer shredded lettuce on rice, top with BBQ chicken, drizzle ranch, and sprinkle cheese, tomatoes, and green onions. Add optional toppings if desired.
Serve immediately while warm and enjoy.
