Ingredients
  

Rice

  • 1.5 cups Long-grain white rice jasmine or basmati preferred

Water

  • 2.25 cups Water (for cooking rice)

Chicken

  • 1 lb Chicken breast boneless and skinless

BBQ Sauce

  • 0.5 cup BBQ Sauce thick and glossy variety

Sweet corn

  • 1 cup Sweet corn fresh or frozen

Black beans

  • 15 oz Black beans drained and rinsed

Avocado

  • 1 whole Avocado ripe, thinly fanned

Red onion

  • 0.25 large Red onion thinly sliced

Fresh Cilantro

  • 0.25 cup Fresh Cilantro chopped

Ranch or Lime Crema

  • 0.25 cup Ranch or Lime Crema for zig-zag drizzle

Vegetable Oil

  • 2 tbsp Vegetable Oil for searing

Instructions
 

  • Cook rice with water until tender, about 15 minutes.
  • While rice cooks, sear chicken breasts in vegetable oil until cooked through, about 6-8 minutes per side.
  • Shred cooked chicken and toss with BBQ sauce.
  • Assemble bowls with rice, BBQ chicken, corn, black beans, avocado, red onion, and cilantro. Drizzle with crema.
  • Serve immediately and enjoy!

Notes

For extra flavor, marinate chicken in BBQ sauce for 30 minutes before cooking.
