Rice

  • 1 cup cooked rice (white, brown, or cauliflower)

Vegetables

  • 1 cup mixed veggies (broccoli, bell peppers, carrots)

Olive Oil

  • 2 tablespoons olive oil

Seasonings

  • Salt and pepper to taste

Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Instructions
 

  • Cook rice according to package instructions and set aside.
  • Cut chicken into bite-sized pieces, season with salt and pepper, and cook in olive oil until golden brown and cooked through (6-8 minutes).
  • Mix sauce ingredients (mayonnaise, sriracha, honey, garlic powder, lime juice) in a bowl and adjust to taste.
  • Add mixed veggies to the skillet and cook for 2-3 minutes until tender.
  • Pour sauce over chicken and veggies, toss to coat, and serve over rice.
