Ingredients
  

Rice

  • 2 cups cooked jasmine rice

Chicken

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika

Frying Oil

  • 1/4 cup vegetable oil for frying

Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust to taste

Vegetables

  • 1 cup shredded lettuce
  • 1 cup diced cucumber
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions

Garnish

  • to taste sesame seeds optional

Instructions
 

  • Mix cornstarch, salt, pepper, garlic powder, and paprika. Coat chicken pieces.
  • Fry coated chicken in hot oil until golden and cooked through, about 5-7 minutes.
  • Mix mayonnaise, chili sauce, and sriracha to make spicy mayo.
  • Assemble bowls with rice, chicken, vegetables, and drizzle with sauce. Garnish with sesame seeds.

Notes

Adjust spice level by varying sriracha amount. Serve immediately for best crispiness.
