Instructions
Blend oats until fine flour.
Add bananas, eggs, baking powder, cinnamon, vanilla, and salt; blend until smooth.
Heat a greased skillet over medium heat.
Pour 1/4 cup batter, cook 2-3 mins until bubbles form, flip, cook 2 mins until golden.
Repeat with remaining batter, adding more oil if needed.
Stack pancakes, top with banana slices, drizzle with syrup or honey.
Notes
For extra flavor, add a dash of vanilla or cinnamon to the batter.
