Ingredients

  • 3 cups rolled oats
  • 3/4 cup walnuts
  • 3/4 cup pecans
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 pieces overripe bananas, mashed
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil *
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix oats, nuts, cinnamon, and salt in a large bowl. Add mashed bananas, maple syrup, coconut oil, and vanilla; stir until coated.
  • Spread mixture evenly on the baking sheet. Bake for 30 minutes, tossing halfway.
  • Cool completely to let granola firm up. Serve with milk or toppings of choice.

Store in an airtight container for up to two weeks.
