Baked Pumpkin Parmesan Chicken

Ingredients
  

Chicken

  • 4 pieces boneless, skinless chicken breasts about 1½ pounds
  • 0.75 cup pumpkin puree
  • 1.25 cups shredded Parmesan cheese (divided)
  • 2 tablespoons mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon parsley
  • 1 teaspoon kosher salt
  • to taste freshly ground black pepper

Instructions
 

  • Preheat oven to 375℉ and spray a casserole dish.
  • Place chicken in dish and prepare pumpkin mixture.
  • Spread pumpkin mixture over chicken, then bake 30 minutes.
  • Sprinkle remaining Parmesan and bake 15 minutes until cooked and melted.
