Ingredients
  

Dry ingredients

  • 2 cups rolled oats (gluten-free)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt

Wet ingredients

  • 1 cup dairy-free creamer
  • ½ cup unsweetened almond milk
  • ½ cup pure maple syrup
  • 3 tablespoons coconut oil (melted and slightly cooled)
  • 1 egg egg

Streusel topping

  • ¼ cup rolled oats (for flour)
  • ¼ cup light brown sugar
  • ¼ teaspoon kosher salt
  • ½ cup chopped pecans
  • 2 tablespoons coconut oil (melted)

Instructions
 

  • Preheat oven to 375°F (190°C). Spray a 9x13 inch baking dish.
  • Mix dry oats, cinnamon, and salt in a bowl. Whisk wet ingredients including creamer, almond milk, maple syrup, melted coconut oil, and egg.
  • Combine wet and dry mixtures, then pour into the prepared dish.
  • Make streusel: grind oats into flour, then pulse with sugar, salt, pecans, and melted coconut oil until combined.
  • Sprinkle streusel over oatmeal and bake for 35-40 minutes until browned. Serve warm.

Notes

For extra crunch, add more pecans or a drizzle of maple syrup before serving.
