Ingredients
  

  • 4 boneless, skinless chicken thighs chicken thighs (or breasts, ~1.5 lbs)
  • 1/2 cup cup pineapple juice
  • 1/3 cup cup soy sauce
  • 1/4 cup cup brown sugar
  • 1/4 cup cup ketchup
  • 2 tablespoons tablespoons rice vinegar (or apple cider vinegar)
  • 1 tablespoon tablespoon grated fresh ginger
  • 3 cloves cloves garlic (minced)
  • 1 tablespoon tablespoon sesame oil (optional, for added richness)
  • 1/2 teaspoon teaspoon red pepper flakes (optional, for heat)

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, ginger, garlic, sesame oil, and red pepper flakes to make the huli huli sauce.
  • Add the chicken thighs to the bowl and toss to coat evenly with the sauce. Let marinate for at least 10 minutes.
  • Line a baking sheet with parchment paper and arrange the chicken thighs. Bake for 35 minutes, or until cooked through.
  • Let the chicken rest for 5 minutes before serving.
  • Serve with steamed vegetables or rice and enjoy!
