Ingredients
  

Vegetables and Cheese

  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper diced red bell pepper
  • 0.5 small red onion, diced
  • 3 cloves minced garlic
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon red pepper flakes
  • 1 cup chopped baby spinach
  • 4 large eggs

Optional toppings

  • chopped fresh basil or chives for topping

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Divide tomatoes, bell pepper, onion, garlic, and feta into ramekins or a baking dish. Drizzle with olive oil.
  • Mix spices and sprinkle over feta and veggies. Bake for 25 minutes.
  • Stir in spinach, create wells, crack eggs into each, and bake for 10 more minutes.
  • Top with herbs and serve with bread or toast.

Notes

Use fresh herbs for best flavor and serve immediately.
