Baked Feta Dip with Tomatoes

  • 8 oz feta cheese
  • 2 pints grape tomatoes (1.5 lbs)
  • 1 head garlic (1/4 inch cut off from the top)
  • 0.25 cup olive oil (extra virgin)
  • 0.25 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.125 teaspoon red pepper flakes
  • 2 tablespoons fresh basil finely chopped
  • as needed Cut up pita, sliced baguette, pita chips or crackers (for serving)

Instructions
 

  • Preheat oven to 425°F (220°C). Place feta in an 8x8 baking dish, surround with tomatoes, and tuck garlic in a corner.
  • Drizzle with olive oil, sprinkle with salt, black pepper, and red pepper flakes.
  • Bake for 30 minutes, then broil for 5 minutes until golden brown.
  • Remove from oven, cool garlic for 5 minutes, squeeze cloves over dish, stir gently, and garnish with basil.
  • Serve warm with pita, baguette, or crackers.

Notes

For a creamier texture, blend the feta and tomatoes before serving.
