Ingredients
  

Bread

  • 2 slices whole grain bread

Avocado

  • 1 ripe avocado ripe avocado

Eggs

  • 2 eggs eggs

Olive oil or butter

  • 1 tbsp olive oil or butter

Salt

Black pepper

  • to taste Black pepper

Optional garnishes

  • as desired red pepper flakes, lemon juice, or fresh herbs for garnish

Instructions
 

  • Toast the bread slices until golden.
  • Mash the avocado with salt, pepper, and lemon juice if desired.
  • Cook eggs in a pan with olive oil or butter to your liking.
  • Spread mashed avocado on toasted bread.
  • Top each slice with a cooked egg and garnish if desired.

Notes

For extra flavor, add a squeeze of lemon or sprinkle with herbs.
