  • 2 pieces avocados
  • 1 15 oz can chickpeas, drained and rinsed
  • 3 pieces scallions, chopped
  • 8 oz tomatoes, quartered
  • 4 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 lemon juice of 1/2 lemon
  • 1 teaspoon oregano
  • 1/2 teaspoon red pepper flakes
  • 2 teaspoons paprika seasoning
  • to taste Salt and pepper

Instructions
 

  • Combine chickpeas, tomatoes, and scallions in a large bowl.
  • Whisk together olive oil, lemon juice, garlic, oregano, paprika, red pepper flakes, salt, and pepper.
  • Pour dressing over the salad and toss gently.
  • Dice avocados and fold into the salad before serving.

Adjust seasoning as needed and serve immediately.
