Asian Style Ground Beef Lettuce Wraps

Ingredients
  

Sauce

  • 60 ml maple syrup (or brown sugar, or coconut sugar)
  • 60 ml coconut aminos (or tamari, or soy sauce)
  • 10 ml rice vinegar
  • 15 ml toasted sesame oil
  • 1 g red pepper flakes (optional)
  • 10 g arrowroot powder (or cornstarch)

Filling

  • 15 ml olive oil
  • 450 g ground beef
  • 2 cloves garlic (minced)
  • 10 g fresh ginger (grated)
  • 1 medium red bell pepper (finely diced)
  • 50 g shredded carrots
  • 4 whole green onions (sliced into 1” pieces)

Seasoning

  • 1 g kosher salt (to taste)
  • 1 g ground pepper (to taste)
  • 1 g sesame seeds (to taste, for garnish)

Serving

  • 1 head boston bibb lettuce
  • 1 cup steamed white rice (optional, for serving)

Instructions
 

  • Make the sauce by whisking maple syrup, coconut aminos, rice vinegar, sesame oil, and red pepper flakes. Add arrowroot powder and whisk until combined.
  • Heat olive oil in a skillet over medium-high heat. Add ground beef and cook until no longer pink, about 5 minutes.
  • Add garlic and ginger, cooking until fragrant, about 1-2 minutes.
  • Add bell pepper and carrots, cooking until tender, about 3-4 minutes.
  • Pour sauce over skillet contents, stir, and simmer until thickened, about 2-3 minutes. Season with salt and pepper.
  • Stir in green onions and spoon filling into lettuce wraps. Garnish with sesame seeds.

Notes

For added flavor, serve with steamed rice or sautéed cauliflower rice.
