Ingredients
  

  • 2 cups apples cored, peeled, and chopped
  • 2 tablespoons unsalted butter
  • 1/4 cup light brown sugar firmly packed
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 2 tablespoons water
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups rolled oats
  • 1 cup brown sugar firmly packed
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 14 tablespoons unsalted butter cut into pieces

Instructions
 

  • Preheat oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
  • In a large bowl, mix together the oats, flour, brown sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  • In a separate bowl, combine the chopped apples, light brown sugar, cinnamon, flour, and salt. Mix until apples are evenly coated.
  • Add the water to the apple mixture and toss until apples are moistened.
  • Press half of the oat mixture into the prepared baking dish. Top with the apple mixture, then cover with the remaining oat mixture.
  • Bake for 35-40 minutes, or until the top is golden brown and the filling is bubbly.

Notes

For the best flavor, use a mix of sweet and tart apples like Granny Smith and Gala. Let the bars cool completely before cutting for clean slices.
