Ingredients
  

Dry ingredients

  • 2 cups rolled oats
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp. salt

Wet ingredients

  • 1 3/4 cups almond milk
  • 2 eggs eggs
  • 1/3 cup pure maple syrup
  • 2 teaspoons pure vanilla extract

Main ingredients

  • 2 medium apples (diced small)
  • 1/2 cup chopped pecans (or other nut)

Instructions
 

  • Preheat oven to 375F and grease an 8x8 dish.
  • Mix dry ingredients in a large bowl; whisk wet ingredients in a separate bowl.
  • Combine wet and dry mixtures, then fold in apples and pecans.
  • Pour into dish, press down, and bake for 40-45 minutes until golden.
  • Cool for 5 minutes, then serve. Store leftovers in refrigerator.

Notes

For extra flavor, sprinkle with additional pecans or apple slices before baking.
