Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg

Wet Ingredients

  • 1 3/4 cups whole milk
  • 2 large eggs
  • 3 tablespoons melted butter plus extra for cooking
  • 1 teaspoon vanilla extract

Apple Mixture

  • 2 medium apples peeled and grated (about 1 1/2 cups)
  • 1 tablespoon lemon juice
  • 1 tablespoon brown sugar

Additional

  • to taste Maple syrup for serving
  • to taste extra butter for serving

Instructions
 

  • Peel, grate apples, toss with lemon juice and brown sugar. Set aside.
  • Mix dry ingredients in a bowl. Whisk wet ingredients separately. Combine and fold in apple mixture.
  • Heat a buttered skillet over medium heat. Pour 1/4 cup batter, cook until bubbles form, then flip and cook until golden.
  • Stack pancakes, serve with butter and maple syrup.

Notes

For extra flavor, sprinkle with cinnamon before serving.
