Ingredients
  

Base ingredients

  • 1 16 ounces thick and chunky salsa
  • 1 15-16 ounces can yellow hominy, rinsed and drained
  • 1 15-16 ounces can black beans, rinsed and drained
  • 1 14.5 ounces can reduced-sodium chicken broth
  • 1 medium Granny Smith apple, cored and chopped
  • 0.667 cup dried cranberries, golden raisins or snipped dried apricots
  • 1 tablespoon unsweetened cocoa powder
  • 2 - 3 teaspoons chili powder
  • several dashes chipotle-flavor bottled hot pepper sauce
  • 0.667 cup coarsely chopped cashews
  • optional Granny Smith apple, finely slivered or chopped for garnish
  • optional Lime wedges for serving

Instructions
 

  • Combine salsa, hominy, beans, chicken broth, apple, cranberries, cocoa powder, chili powder, and hot pepper sauce in a Dutch oven. Bring to boil, then simmer for 20 minutes.
  • Stir in cashews just before serving. Garnish with chopped apple and lime wedges if desired.

Notes

For extra flavor, garnish with additional chopped apple and a squeeze of lime.
