Ingredients
  

Canned Chickpeas

  • 540 ml canned chickpeas (drained and rinsed)

Vegetables and Fruits

  • 1 cup diced celery (about 2 stalks)
  • 1 red bell pepper diced red bell pepper
  • 1 apple diced apple

Condiments and Herbs

  • 3 tbsp vegan mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh dill (chopped)
  • 2 tbsp lemon juice
  • 0.2 tsp garlic powder
  • 0.25 tsp salt (plus more to taste)
  • 0.25 tsp pepper (plus more to taste)

Bread and Wraps

  • as needed Whole grain bread for sandwiches
  • as needed Whole wheat wraps for wraps
  • as needed Crackers or veggies for a dip

Instructions
 

  • Mash the chickpeas with a potato masher or fork, leaving some chunks for texture.
  • Add the diced celery, bell pepper, apple, mayonnaise, mustard, dill, lemon juice, garlic powder, salt, and pepper. Mix well.
  • Serve in sandwiches, wraps, or as a dip. Store leftovers in the fridge for up to 4 days.
