Ingredients
  

Protein

  • 1 lb chicken breasts pounded to an even thickness

Seasoning

  • to taste garlic salt and pepper

Vegetables

  • 4 ribs celery chopped
  • 2 apples apples chopped

Nuts & Dried Fruit

  • 1/2 cup sliced almonds
  • 1/3 cup dried cranberries

Green Onions

  • 2 green onions green onions chopped

Greens

  • 6-8 cups mixed greens

Dressing

  • 5 oz plain Greek yogurt
  • 2 Tablespoons Apple Cider Vinegar
  • 1 Tablespoon honey
  • 1 Tablespoon minced shallots
  • 1/2 teaspoon poppy seeds
  • to taste salt and pepper

Instructions
 

  • Cook chicken breasts until fully cooked, then slice.
  • Mix dressing ingredients: Greek yogurt, apple cider vinegar, honey, shallots, poppy seeds, salt, and pepper.
  • Layer greens, chicken, apples, celery, cranberries, almonds, and green onions in mason jars.
  • Drizzle with dressing before serving or pack separately.
