Ingredients
  

Dairy

  • 3 cup Dannon Light and Fit Vanilla Greek Yogurt
  • 1 large apple, peeled and chopped (200 grams)

Sweeteners & Spices

  • 1 1/2 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1/8 tsp arrowroot flour (optional) to thicken the sauce

Granola

  • 3/4 cup rolled oats
  • 1 1/2 tbsp coconut flour
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 250°F (120°C). Line a baking sheet with SILPAT.
  • Mix granola ingredients, spread on baking sheet, and bake for 40 minutes, flipping halfway.
  • Combine apples, maple syrup, and cinnamon in a small pan; boil, cover, and simmer until tender.
  • If using arrowroot, dissolve in water, stir into apple mixture, boil briefly, then cool.
  • Layer yogurt, apple compote, and granola in serving glasses.

Notes

Store granola in an airtight container for future use.
