Instructions
Preheat oven to 250°F (120°C). Line a baking sheet with SILPAT.
Mix granola ingredients, spread on baking sheet, and bake for 40 minutes, flipping halfway.
Combine apples, maple syrup, and cinnamon in a small pan; boil, cover, and simmer until tender.
If using arrowroot, dissolve in water, stir into apple mixture, boil briefly, then cool.
Layer yogurt, apple compote, and granola in serving glasses.
Notes
Store granola in an airtight container for future use.
