Ingredients
  

butter

  • 1 stick butter (at room temperature)

sugar

  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar

egg

  • 1 large large egg

vanilla extract

  • 1 teaspoon vanilla extract

flour

  • 1.5 cups flour (spooned and leveled, not scooped)

cinnamon

  • 1.5 teaspoons cinnamon

baking soda

  • 1/2 teaspoon baking soda

salt

  • 1/4 teaspoon salt

rolled oats

  • 1 cup rolled oats (not instant/quick oats)

chopped apples

  • 1 cup chopped apples (about 1.5 small apples)

chopped white chocolate

  • 2 oz chopped white chocolate

Instructions
 

  • Preheat oven to 350°F / 180°C. Beat sugars and butter until combined.
  • Add egg and vanilla; beat until smooth. Sift in flour, baking soda, cinnamon, and salt; mix on low until half combined.
  • Stir in chopped apples, chocolate, and oats until evenly distributed. Chill for 30 minutes if desired.
  • Scoop dough into 3-tablespoon balls, place on parchment-lined baking sheet 2 inches apart. Bake for 14-16 minutes until edges are golden.
  • Cool on baking sheet before transferring. Enjoy!

Notes

Chilling the dough enhances chewiness. Use fresh apples for best flavor.
