Instructions
Preheat oven to 350°F / 180°C. Beat sugars and butter until combined.
Add egg and vanilla; beat until smooth. Sift in flour, baking soda, cinnamon, and salt; mix on low until half combined.
Stir in chopped apples, chocolate, and oats until evenly distributed. Chill for 30 minutes if desired.
Scoop dough into 3-tablespoon balls, place on parchment-lined baking sheet 2 inches apart. Bake for 14-16 minutes until edges are golden.
Cool on baking sheet before transferring. Enjoy!
