Ingredients
  

Dry Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon fine sea salt
  • 1 teaspoon ground cinnamon

Wet Ingredients

  • 2/3 cup light brown sugar
  • 2 large eggs
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract
  • 6 tablespoons unsalted butter, melted

Apple Filling

  • 2 cups finely diced apples (such as Golden Delicious)

Topping

  • 1/2 cup unsalted butter, melted for topping
  • 3/4 cup granulated sugar for topping
  • 2 teaspoons ground cinnamon for topping

Instructions
 

  • Preheat oven to 425°F (220°C) and line a muffin tin with liners.
  • Mix dry ingredients: flour, baking powder, salt, and cinnamon.
  • Combine wet ingredients: brown sugar, eggs, milk, vanilla, and melted butter.
  • Stir dry into wet just until combined; fold in diced apples.
  • Fill muffin cups 3/4 full, top with butter, sugar, and cinnamon mixture, then bake for 15 minutes.

Notes

For extra flavor, sprinkle additional cinnamon on top before baking.
