Instructions
Preheat oven to 425°F (220°C) and line a muffin tin with liners.
Mix dry ingredients: flour, baking powder, salt, and cinnamon.
Combine wet ingredients: brown sugar, eggs, milk, vanilla, and melted butter.
Stir dry into wet just until combined; fold in diced apples.
Fill muffin cups 3/4 full, top with butter, sugar, and cinnamon mixture, then bake for 15 minutes.
Notes
For extra flavor, sprinkle additional cinnamon on top before baking.
