  • 1 cup oats (ground into flour or oat flour)
  • 0.5 cup rice flour
  • 4 tbsp cornstarch (or arrowroot flour)
  • 2 tbsp coconut sugar (or brown sugar)
  • 1 tbsp flax seeds (ground or chia seeds)
  • 1 tsp baking powder

Wet ingredients

  • 1.5 cups plant-based milk (canned lite coconut milk)
  • 1 small banana
  • 0.5 tbsp lemon juice (or lime juice)
  • 0.5 tsp vanilla extract

Apple filling

  • 3 apples peeled, cored, and chopped
  • 3 tbsp coconut sugar (or brown sugar)
  • 2 tbsp plant-based milk
  • 0.5 tbsp lemon juice (or lime juice)
  • 0.5 tsp cornstarch
  • 1 tsp cinnamon

Instructions
 

  • Mix dry ingredients in a bowl.
  • Blend wet ingredients until smooth.
  • Combine wet and dry, let batter rest.
  • Cook crepes in oiled skillet until golden, about 2-4 minutes per side.
  • Prepare apple filling by mixing all ingredients, then simmer until tender.
  • Fill crepes with apple mixture, roll up, and serve.

Notes

Adjust milk as needed to thin batter; batter thickens over time.
