Greek yogurt

mayo
sub vegan mayo or more Greek yogurt

Dijon mustard
or yellow mustard

apple cider vinegar

or to taste + freshly ground black pepper
Instructions
Whisk Greek yogurt, mayo, Dijon mustard, honey, vinegar, salt, and pepper to make the dressing.
Dice apples and toss with lemon juice in a large bowl.
Fold in celery, grapes, chickpeas, pecans, and cranberries. Pour dressing and mix.
Cover and chill for 30 minutes. Serve cold.
Notes
For extra crunch, add some chopped walnuts or almonds.
