Apple Chickpea Salad

A fresh and crunchy salad combining sweet apples, hearty chickpeas, and a tangy dressing, perfect for a light lunch or side dish.

Ingredients
  

Fruits and Vegetables

  • 3 pieces Honeycrisp apples sub Fujis, Gala, or Pink Lady
  • 1 piece lemon the juice
  • 2 ribs celery sliced
  • 1 cup seedless grapes red or white

Canned Goods

  • 1 can chickpeas 15 oz or 400 g — drained and rinse

Nuts and Dried Fruits

  • ½ cup chopped pecans or walnuts
  • 2 tablespoons dried cranberries

Dairy and Condiments

  • ¾ cup Greek yogurt
  • 2 tablespoons mayo sub vegan mayo or more Greek yogurt
  • 1 tablespoon Dijon mustard or yellow mustard
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon salt or to taste + freshly ground black pepper

Instructions
 

  • Whisk Greek yogurt, mayo, Dijon mustard, honey, vinegar, salt, and pepper to make the dressing.
  • Dice apples and toss with lemon juice in a large bowl.
  • Fold in celery, grapes, chickpeas, pecans, and cranberries. Pour dressing and mix.
  • Cover and chill for 30 minutes. Serve cold.

Notes

For extra crunch, add some chopped walnuts or almonds.
