Instructions
Heat oil in a large skillet over medium heat. Cook sausage 2-3 minutes per side until browned. Remove and set aside.
Add onion, sweet potato, and Brussels sprouts to the same pan. Season with salt, pepper, and garlic powder. Saute 8-10 minutes until tender and crisp.
Add apple, kale, broth, vinegar, and thyme. Simmer 3-4 minutes until apple is soft and kale wilted.
Return sausage to pan and reheat. Serve topped with parsley.
Notes
For extra flavor, add a splash of apple cider vinegar before serving.
