  • 2 tbsp avocado oil
  • 12 oz chicken apple sausage
  • 0.5 yellow onion yellow onion (diced)
  • 2 cups sweet potato (diced)
  • 1.5 cups Brussels sprouts (halved)
  • 0.75 tsp salt
  • 0.25 tsp black pepper
  • 2 tsp garlic powder
  • 0.5 cup Honeycrisp apple (peeled and diced)
  • 1 cup kale (chopped)
  • 0.25 cup chicken broth
  • 1 tsp apple cider vinegar
  • 2 tsp thyme leaves
  • 1 tbsp parsley (chopped)

Instructions
 

  • Heat oil in a large skillet over medium heat. Cook sausage 2-3 minutes per side until browned. Remove and set aside.
  • Add onion, sweet potato, and Brussels sprouts to the same pan. Season with salt, pepper, and garlic powder. Saute 8-10 minutes until tender and crisp.
  • Add apple, kale, broth, vinegar, and thyme. Simmer 3-4 minutes until apple is soft and kale wilted.
  • Return sausage to pan and reheat. Serve topped with parsley.

Notes

For extra flavor, add a splash of apple cider vinegar before serving.
