Instructions
Preheat oven to 375°F (190°C). Line muffin tin with paper liners or spray.
Mix dry ingredients in a large bowl. In a separate bowl, combine milk, eggs, oil, and vanilla.
Add wet mixture to dry ingredients; stir until just combined. Fold in apples and carrots.
Divide batter into muffin tins. Bake for 15-18 minutes. Cool slightly before removing.
Notes
For extra flavor, add a pinch of nutmeg or cinnamon on top before baking.
