Ingredients
  

Dry ingredients

  • 1.5 cups white wheat flour
  • 0.75 cup brown sugar
  • 0.5 cup oats (old fashioned or 1 minute oats)
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground nutmeg

Wet ingredients

  • 2 eggs eggs
  • 0.5 cup milk
  • 0.25 cup oil (vegetable or canola)
  • 1 teaspoon vanilla

Fruits

  • 1 cup grated apple (1-2 apples)
  • 1 cup grated carrot (2-3 carrots)

Instructions
 

  • Preheat oven to 375°F (190°C). Line muffin tin with paper liners or spray.
  • Mix dry ingredients in a large bowl. In a separate bowl, combine milk, eggs, oil, and vanilla.
  • Add wet mixture to dry ingredients; stir until just combined. Fold in apples and carrots.
  • Divide batter into muffin tins. Bake for 15-18 minutes. Cool slightly before removing.

Notes

For extra flavor, add a pinch of nutmeg or cinnamon on top before baking.
