Instructions
Preheat oven to 350°F (175°C). Grease and flour a 12-cup bundt pan.
In a large bowl, whisk together flour, baking soda, cinnamon, and salt.
In another bowl, combine sugar, oil, vanilla extract, and eggs. Mix until smooth.
Add the dry ingredients to the wet mixture and stir until just combined. Fold in the diced apples.
Pour batter into the prepared pan and bake for 50 minutes, or until a toothpick inserted comes out clean.
Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
Notes
For an extra touch, dust with powdered sugar or serve with a caramel glaze.
