  • 2 cups diced yellow squash
  • 1/2 cup chopped onion
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Melt butter in a skillet, add onion, and cook until softened.
  • Stir in flour, cook for 1 minute, then whisk in milk until thickened.
  • Add corn, squash, salt, and pepper; stir to combine.
  • Fold in 3/4 cup cheese, pour into baking dish, and top with remaining cheese and breadcrumbs.
  • Bake for 25-30 minutes until bubbly and golden brown.
