Ingredients
  

Dough

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1/4 cup ice water

Filling

  • 4 cups fresh blackberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

Egg wash

  • 1 large egg, beaten
  • 1 tablespoon turbinado sugar

Instructions
 

  • Mix flour and salt; cut in butter until coarse crumbs form.
  • Add ice water gradually, mix until dough forms, then chill for 30 minutes.
  • Roll out dough into a 12-inch circle and transfer to a baking sheet.
  • Mix blackberries with sugar, cornstarch, and lemon juice; spoon onto dough center.
  • Fold edges over filling, brush with egg wash, sprinkle with turbinado sugar, and bake at 400°F for 35 minutes.
  • Cool for 15 minutes before slicing and serving.

Notes

Chill the dough thoroughly for best results and serve warm or at room temperature.
