Ingredients
  

Protein

  • 1.25 pounds boneless skinless chicken breast cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Carbohydrates

  • 3 cups cooked rice

Vegetables

  • 2 cups broccoli florets
  • 1 cup shredded carrots
  • 1 cup cucumber, chopped

Sauce

  • 3 tablespoons honey
  • 2 tablespoons low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon ketchup
  • 1 teaspoon rice vinegar
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Instructions
 

  • Preheat air fryer to 380°F (193°C).
  • Toss chicken with oil and seasonings, then cook in air fryer for 10-12 minutes until cooked through.
  • Mix honey, soy sauce, garlic, ketchup, and vinegar; thicken with cornstarch slurry and heat until slightly thickened.
  • Toss cooked chicken with sauce, then assemble bowls with rice, vegetables, and chicken. Garnish with sesame seeds and green onion if desired.

Notes

For extra flavor, marinate the chicken in the sauce before cooking.
