Instructions
Preheat oven to 400°F (200°C). Roast acorn squash cut side up with olive oil, salt, and pepper for 20 minutes.
Cook sausage in a skillet until browned. Add onion, celery, kale, and cook 3-5 minutes. Mix in pecans, cranberries, and apple; cook 3-4 minutes.
Stuff roasted squash halves with sausage mixture. Cover with cut puff pastry, seal edges, and brush with beaten egg.
Bake for 15-20 minutes until pastry is golden. Let cool slightly before serving.
Notes
Ensure puff pastry is cold before baking for a flaky crust.
