Instructions
Slice zucchini into fry shapes and place on a baking sheet lined with parchment paper.
Dip each zucchini fry in beaten eggs, then coat in a mixture of panko breadcrumbs and Parmesan cheese.
Place coated zucchini fries on a prepared baking sheet and season with kosher salt and black pepper.
Bake in a preheated oven at 400°F (200°C) for 20 minutes, flipping halfway through.
Remove from oven and let cool slightly before serving with ranch dipping sauce.
Notes
For extra crispiness, try chilling the coated zucchini fries in the refrigerator for 30 minutes before baking.
